Tofu is made from soybeans that are ground in water, heated, and mixed with minerals like calcium or magnesium salt. The curds are then pressed into a block, and sold as tofu. You can buy several different types of tofu, from extra-soft silken tofu to extra-firm tofu. Tofu is like a blank-canvas waiting for you to flavor it with different ingredients. It is a vegetable protein, which is low in calories, about 94 per serving . It packs 10 grams of protein per ½ cup serving. It is low in fat, about 6 grams of fat, it is low in sodium, low carb and contains no cholesterol. Touted as a health food it can be mixed into a variety of recipes from scrambled eggs, desserts, stir-fry’s or baked, and grilled. It is very common to marinade it so it takes on a nice flavor before cooking.

We all need to treat ourselves with a treat now and then. Sometimes big desserts are very heavy and we tend to eat too much. Lighter fare desserts are fun to nibble on and you don’t tend to eat a big a piece. Fruit-based desserts are also lighter than the creamy chocolaty ones. When picking out desserts try to focus more on fruit. Also look at your recipes for one’s that can be made smaller like mini-cheesecakes made in muffin tins or mini cupcakes.
